For most of recorded history sage was the herb you grew above all others — Salvia, from the Latin salvere, to be saved, the very name a promise of rescue: salvia salvatrix, sage the savior. This is Salvia officinalis, the garden sage of the cook and the healer — the gray-green plant of the elder, the herb of wisdom quite as much as of health. (Its white-leaved desert cousin Salvia apiana is the smudge-stick sage; kin, but distinct — this is the garden sage.)
